The scent is ethereal, vinous, decisive. In the mouth the indigenous yeast gives intense and raw flavors of earth, wood, moss and forest in general. Ideal for rich first courses, venison, boiled meat, red meats, aged cheeses, sweet and spicy gorgonzola. Barrique: 12 months of aging in French oak barrels.
